The animals on the ground were created for several reasons. They were created the sixth day. The day before the fish and the fowls were created, and we want to be fresh as fish is in the water and we want to be free as the bird. That is a contradiction. God let us find the way out of the contradiction by the animals on the ground. The animals on the ground picture our reason where the plants on the ground picture our feelings shown. Creatures are words where the plants are bodily expressions. By the creation of the creatures we took or gained control: Man was created after that.
Noah was the first to eat meat. And so he was the first to be fed by reason. You find my explanation of what this means on my page outside ChristiansUnite at http://www.vaccinius.com/the-female-calling .
By reading The Law we see that the animals meant a lot to the Children of Israel. Offerings (of reason) was very important. And Moses clearly stated what kind of reason we should allow ourselves to be fed upon.
You are quite right condemning brutality against animals. The one brutal to animals shows he is brutal to rationality. He will not reason but will be instrumental by thought.

People have there own views as to the reason for there to be animals on earth some think they were given to be used for food and little else. If you become close to animals and become there friends you will find there is much more to them than you might think. They have a good understanding and insight behond most humans but can not speak.
